Chocolate Protein Fudge using Jamie Eason’s Natural Whey Protein

 

I like to make treats using protein powder because it balances out the sugar and carbs. This recipe combines two of my favorite things – chocolate and peanut butter!  And even better – it’s a one bowl recipe! How easy is that?

I know everyone has their favorite protein powder to use, and in this recipe I used Jamie Eason’s Lean Body for Her in Chocolate. It is all natural with no junk or artificial sweeteners.  I’ve learned this protein powder mixes really well and has a nice chocolaty sweetness.

Ingredients

½ cup Natural Crunchy Peanut Butter

2 scoops Chocolate Protein Powder (I used JE Leanbody4her)

1 tablespoon ground flaxseed

1 tablespoon Dark 100% Unsweetened Cocoa

1/8 cup honey (2 tablespoons)

2-3 tablespoons milk of choice (I used 2)

 

Add peanut butter, protein powder, flaxseed and cocoa to a bowl and mix. Stir in honey until a crumbly dough forms (it will seem a little dry). Start adding milk 1 tablespoon at a time until dough just comes together.

Press into muffin pan, or muffin liners, or even in an 8’x8’ pan and stick in freezer until firm. Makes 12 cups. Store in refrigerator.

Calories 96; Total Fat 5.7g Sat Fat. .8g; Carbs 5.8; Protein 6g

 

 

As an afterthought I wondered what the texture would be like if I added coconut oil. So I divided the recipe in half and added 1 tablespoon of coconut oil (next time I’ll try a little less). If you like almond joy or mounds candy bars you will love these! If you add the coconut oil it will bring total calories to 106 and fat grams to 6.9g
