I am often asked what I eat. To be honest, I am a terrible creature of habit. I am so busy during the week, I usually prepare the same meals weekly, thus I have become bored and that can be dangerous when one is trying to eat clean. So, I decided I was going to mix up my menu – at least for dinner. This is my plan for this week.
For breakfast I usually have the same thing: Oatmeal with ground flaxseed, wheat germ, cinnamon, and blueberries. For protein this week I will rotate between Egg Frittata Muffins, Greek Yogurt with honey, or a Protein Smoothie.
For lunch I have cooked and shredded chicken breasts and made turkey meatballs. I will eat these with a variety of veggies.
I will be testing some new recipes for Clean Eating Magazine this week and I am super excited about it! However, I am unable to post the recipes as they some will appear in next month’s issue of the magazine.
Monday: Chicken with Spinach and Feta
Tuesday: Pepper and Onion Steak Stir-fry
Wednesday: Farmer’s Market Omelet
Thursday: Southwestern Chicken Salad
Friday: Chicken Quesadillas
Saturday: Lean Hamburgers with Baked BBQ Potato Wedges (test recipe for Clean Eating Magazine)
Sunday: Shrimp & Summer Vegetable Paella (test recipe for Clean Eating Magazine)
